Ingredients/Components
- sugar
- eggs - 5 item
- milk - 1 c
- salt - 1/4 tsp
- shortening
- sifted cake flour - 3 c
- can flaked coconut or about 2 c - 1 oz
How to make coconut pound cake:
Beat shortening at medium speed with electric mixer. Gradually add sugar, beating well. Add eggs, one at a time, beating after each addition.Combine flour and salt; add to creamed mixture alternately with milk, beginning and ending with flour mixture. Mix just until blended after each addition. Stir in coconut.
Pour batter into greased and floured 10-inch tube pan. Bake at 325° for 1 hour and 25 minutes or until wooden pick comes out clean. Cool 15 minutes. Remove from pan; cool on wire rack.
