Ingredients/Components
- sugar - 2 c
- cinnamon - 4 tsp
- eggs - 4 item
- vanilla - 3 Tbsp
- salt - 1 tsp
- flour - 2 c
- nutmeg - 2 tsp
- baking soda - 2 tsp
- vegetable oil
- powdered sugar - 1 lb
- grated lemon rind - 1 Tbsp
- walnuts, chopped - 1/2 c
- carrots, grated - 3 c
- softened cream cheese
- stick butter, softened - 1 item
How to make carrot cake:
Icing:8 oz. softened cream cheese1 stick butter, softened1 lb. powdered sugar3 Tbsp. vanilla1 Tbsp. grated lemon rind Mix oil, sugar, flour and carrots. Add all other ingredients. Mix well. Pour into greased and floured 9 x 13-inch pan. Bake at 350° for 1 hour. Let cake cool before icing it.Icing: Mix well and spread on cake.
