Ingredients/Components
- sugar - 2 c
- cinnamon - 2 tsp
- chopped pecans - 1 c
- stick margarine - 1 item
- vanilla flavoring - 2 tsp
- grated carrots - 3 c
- eggs, beaten - 4 item
- self-rising flour - 2 c
- cooking oil
- box confectioners sugar - 1 item
- small can crushed pineapple - 1 item
- pecans, chopped - 1 c
- Add eggs; beat well
How to make carrot cake:
Beat oil and sugar well. Add eggs; beat well. Sift flour and cinnamon; blend with egg mixture. Fold in carrots, pineapple and nuts; place in a loaf pan. Bake at 350° for 1 hour. Bake 30 minutes in 2 layer pans.Frosting:1 (8 oz.) pkg. cream cheese1 stick margarine1 box confectioners sugar2 tsp. vanilla flavoring1 c. pecans, chopped Blend all ingredients together.Recipe categories: Desserts, Cakes, Carrots.
