  • sugar - 2 c
  • cinnamon - 2 tsp
  • chopped pecans - 1 c
  • stick margarine - 1 item
  • vanilla flavoring - 2 tsp
  • grated carrots - 3 c
  • eggs, beaten - 4 item
  • self-rising flour - 2 c
  • cooking oil
  • box confectioners sugar - 1 item
  • small can crushed pineapple - 1 item
  • pecans, chopped - 1 c
  • Add eggs; beat well

How to make carrot cake:

Beat oil and sugar well. Add eggs; beat well. Sift flour and cinnamon; blend with egg mixture. Fold in carrots, pineapple and nuts; place in a loaf pan. Bake at 350° for 1 hour. Bake 30 minutes in 2 layer pans.Frosting:1 (8 oz.) pkg. cream cheese1 stick margarine1 box confectioners sugar2 tsp. vanilla flavoring1 c. pecans, chopped Blend all ingredients together.
