  • cinnamon - 2 tsp
  • eggs - 4 item
  • vanilla - 1 tsp
  • pkg - 1 oz
  • salt - 1 tsp
  • coconut - 8 oz
  • grated carrots
  • baking powder - 2 tsp
  • baking soda
  • all-purpose flour - 2 c
  • powdered sugar - 1 lb
  • can crushed pineapple, drained - 1 oz
  • salad oil
  • pecans, chopped
  • Add oil, vanilla and eggs; mix well

How to make 14 carrot cake:

Sift flour, baking powder, soda, salt, cinnamon and sugar. Add oil, vanilla and eggs; mix well. Add carrots, pineapple, nuts and coconut. Then blend thoroughly. Grease and flour a 9 x 13-inch pan. Bake in a 350° oven for 35 to 40 minutes. Cool; frost with Cream Cheese Frosting.Cream Cheese Frosting:1/2 lb. butter1 (8 oz.) pkg. cream cheese1 lb. powdered sugar1 tsp. vanilla Combine butter, cream cheese and vanilla; blend well. Add powdered sugar and mix well. Spread over cooled cake.
