Ingredients/Components
- sugar - 2 c
- cinnamon - 2 tsp
- eggs - 4 item
- vanilla - 1 tsp
- pkg - 1 oz
- salt - 1 tsp
- coconut - 8 oz
- grated carrots
- baking powder - 2 tsp
- baking soda
- all-purpose flour - 2 c
- powdered sugar - 1 lb
- can crushed pineapple, drained - 1 oz
- salad oil
- pecans, chopped
- Add oil, vanilla and eggs; mix well
How to make 14 carrot cake:
Sift flour, baking powder, soda, salt, cinnamon and sugar. Add oil, vanilla and eggs; mix well. Add carrots, pineapple, nuts and coconut. Then blend thoroughly. Grease and flour a 9 x 13-inch pan. Bake in a 350° oven for 35 to 40 minutes. Cool; frost with Cream Cheese Frosting.Cream Cheese Frosting:1/2 lb. butter1 (8 oz.) pkg. cream cheese1 lb. powdered sugar1 tsp. vanilla Combine butter, cream cheese and vanilla; blend well.
