Ingredients/Components

  • sugar - 2 c
  • cinnamon - 2 tsp
  • eggs - 4 item
  • chopped nuts - 1 c
  • flour - 3 c
  • oil
  • baking soda - 3 tsp
  • pinch salt - 1 item
  • grated carrots or I use 2 jars junior baby food carrots - 2 c

How to make carrot cake:

Mix together first 4 ingredients. Add flour, soda and cinnamon. Add chopped nuts and salt. Blend all together. Bake in a Bundt pan or fluted pan approximately 1 hour. Test with a toothpick for doneness. May ice with vanilla or cream cheese frosting.
