  • vanilla - 1 tsp
  • light corn syrup - 1 c
  • light cream - 2 c
  • butter or margarine not corn oil - 1 c
  • packed brown sugar 16 oz

How to make caramels:

Do not try this recipe when humidity is high. Caramels may not get firm.

Line an 8 x 8 x 2-inch or 9 x 9 x 2-inch baking pan with foil. Extend foil over edge of pan. Butter foil; set aside.

In a heavy, 3-quart saucepan, melt butter over low heat. Add brown sugar, cream and corn syrup; mix well. Cook and stir over medium heat to boiling. Clip on candy thermometer. Cook and stir to 248° (firm ball stage). Continue to stir. Remove from heat. Remove thermometer. Stir in vanilla.

Pour into prepared pan. When firm, cut into 1-inch pieces with a buttered knife.
