Ingredients/Components
- sugar - 1 c
- eggs - 2 item
- vanilla - 1 tsp
- salt - 1/2 tsp
- butter - 2 Tbsp
- baking powder - 1 tsp
- baking soda - 1 tsp
- cooking oil - 2/3 c
- sifted confectioners sugar - 2 c
- ground cinnamon - 1 tsp
- finely shredded carrots - 1 c
- presifted flour
- crushed pineapple with syrup - 1/2 c
- Add cooking oil, eggs, shredded carrots, crushed pineapple with syrup and vanilla
How to make carrot cake:
Sift together in a large bowl flour, sugar, baking powder, baking soda, cinnamon and salt. Add cooking oil, eggs, shredded carrots, crushed pineapple with syrup and vanilla. Mix together on medium speed until well blended. Bake in greased and lightly floured pan at 350° for 35 minutes. Cool and frost.Frosting:2 (3 oz.) softened cream cheese2 Tbsp. butter2 tsp. vanilla2 c. sifted confectioners sugar Blend together softened cream cheese, butter and vanilla on low speed. Gradually add 2 cups sifted confectioners sugar. Beat until smooth. If needed, add a teaspoon of milk at a time.Recipe categories: Desserts, Cakes, Carrots.
