Ingredients/Components

  • vanilla - 1/2 tsp
  • salt - 1/2 tsp
  • brown sugar - 1 c
  • butter - 1/2 c
  • baking soda - 1/2 tsp
  • light corn syrup - 1/4 c
  • peanuts - 1-1/2 c
  • popped popcorn - 3 qt

How to make caramel corn:

In 2 quart casserole, combine butter, brown sugar, corn syrup and salt. Microwave on high 3-4 minutes, stirring every minute until comes to a boil. Microwave 2 minutes more. Then stir in baking soda, vanilla and nuts. Place popped corn in a large brown paper bag. Pour syrup over popped corn. Stir well. Microwave on high 1 minute. Shake well. Microwave on high 1 more minute. Pour into container and stir to separate. Store in air tight container.
