Cajun sausage and rice
Ingredients/Components
- box red beans and rice mix - 1 oz
- bell pepper, cut into bite size pieces - 2 item
- fully cooked spicy beef sausages, sliced - 4 item
- oil - 1 tsp
- scallions - 1 item
How to make cajun sausage and rice:
Bring 3 1/2 c. water to boil in a large saucepan. Add rice mix; reduce heat, cover and simmer 10 minutes. Meanwhile, heat oil in a large nonstick skillet. Add peppers; saut?© over high heat 5 minutes. Add sausage; saut?© 3 minutes until lightly browned. Place mixture on rice (don't stir), cover and simmer 10 minutes until rice is tender.
