Pasta fresca with basil



  • chopped onion - 1/3 c
  • chopped fresh parsley - 1/4 c
  • cloves garlic, minced - 2 item
  • olive oil - 1 tsp
  • freshly ground black pepper - 1 item
  • part-skim Mozzarella cheese, grated - 4 oz
  • chopped fresh basil or 2 tsp - 3 Tbsp
  • eggless rainbow pasta - 8 oz
  • tomatoes, cored and diced, or 1 28 oz

How to make pasta fresca with basil:

Cook pasta according to package directions, omitting salt. While cooking pasta, prepare sauce. Heat the olive oil in a large saucepan. Saute onion and garlic until just tender. Add tomatoes, parsley and basil; simmer 15 to 20 minutes. Drain pasta. Mix with tomato sauce and cheese. Toss until cheese is melted. Sprinkle generously with freshly ground pepper. Serves 4 to 6.
