Buttery peanut brittle
Ingredients/Components
- granulated sugar - 2 c
- butter or margarine - 1 c
- water - 1/2 c
- soda - 1 tsp
- raw peanuts - 2 c
- lite corn syrup - 1 c
How to make buttery peanut brittle:
Combine sugar, syrup and water in 3-quart pan. When syrup boils, add butter. Cook until 230°. Stir frequently after that. Add nuts at 280° (soft crack). Stir constantly until 305° (hard crack). Remove from heat. Stir in soda. Pour on 2 cookie sheets, buttered. As candy cools, stretch it thin, using forks. Turn over as soon as stiff enough. Break into pieces.
