Butternut squash soup
Ingredients/Components
- salt - 1 item
- water - 2 c
- lime juice - 2 Tbsp
- cloves garlic - 3 item
- finely chopped onion - 1/2 c
- white pepper - 1 item
- unsalted butter - 3 Tbsp
- canned chicken broth - 2 c
- 1 1/2 lb - 4 c
- minced, peeled fresh ginger root
How to make butternut squash soup:
Cook onion and ginger root in butter until onion is soft. Add squash, broth, water and garlic and bring to a boil. Simmer 15 minutes until squash is tender. Puree mixture. Stir in lime juice. Add salt and pepper to taste. Serve warm.Recipe categories: Vegetables, Soups & stews, Main dish.
