Ingredients/Components

  • Margarine - 1/3 c
  • Eggs - 2 item
  • Pecans, chopped - 1/4 c
  • Margarine, melted - 2 tbsp
  • Evaporated Milk
  • Granulated Sugar - 3/4 c
  • Vanilla Extract - 1 tsp
  • Packed Brown Sugar - 1/4 item
  • Butternut Squash, cooked, mashed - 2 c
  • Beat eggs, milk and vanilla

How to make butternut squash bake:

Cream margarine and sugar in a mixing bowl. Beat eggs, milk and vanilla. Stir in squash (mixture will be thin). Pour into a greased 11 x 7 x 2 baking dish. Bake uncovered at 350° for 45 minutes or until almost set.Topping:1/2 c. Rice Krispies Cereal1/4 Packed Brown Sugar1/4 c. Pecans, chopped2 tbsp. Margarine, melted Combine all ingredients. Sprinkle over casserole. Return to the oven for 5-10 minutes. Yields 6-8 servings.
