Butternut squash and apple soup



  • salt - 1 tsp
  • heavy cream - 1/4 c
  • pepper - 1/4 tsp
  • cans chicken broth - 3 item
  • medium onion - 1 item
  • marjoram - 1/4 tsp
  • tart apples - 3 item
  • rosemary - 1/4 tsp
  • cans water - 2 item
  • slices white bread - 2 item
  • chopped parsley optional garnish - 1 item

How to make butternut squash and apple soup:

Peel, seed and coarsely chop apples and squash. Coarsely chop onion. Combine first 10 ingredients in heavy saucepan. Bring to a boil and simmer uncovered 45 minutes. Cool soup a bit, then puree in blender. Return soup to saucepan and bring to a boil. Add cream and, if desired, sprinkle with chopped parsley. Serves 6.
