Butternut squash and apple soup
Ingredients/Components
- salt - 1 tsp
- heavy cream - 1/4 c
- pepper - 1/4 tsp
- cans chicken broth - 3 item
- medium onion - 1 item
- marjoram - 1/4 tsp
- tart apples - 3 item
- rosemary - 1/4 tsp
- cans water - 2 item
- slices white bread - 2 item
- chopped parsley optional garnish - 1 item
How to make butternut squash and apple soup:
Peel, seed and coarsely chop apples and squash. Coarsely chop onion. Combine first 10 ingredients in heavy saucepan. Bring to a boil and simmer uncovered 45 minutes. Cool soup a bit, then puree in blender. Return soup to saucepan and bring to a boil. Add cream and, if desired, sprinkle with chopped parsley.
