Broiled crab cakes



  • lemon juice - 1 tsp
  • eggs, well beaten - 2 item
  • finely chopped fresh parsley - 1 Tbsp
  • lump crabmeat - 1 lb
  • seafood seasoning or 1 tsp - 1 tsp

How to make broiled crab cakes:

Pick over crabmeat gently and carefully to remove shells and cartilage; do not break up lump meat. Add seasoning, lemon juice, parsley and eggs; combine gently. Form into medium-size cakes; place in lightly buttered flat pan. Place under broiler; cook until golden brown, turning once. Serve with salted crackers. Makes 4 servings.
