Blueberry bread



  • sugar
  • cinnamon - 1/2 tsp
  • vanilla - 1 Tbsp
  • milk - 1 c
  • salt - 1/2 tsp
  • flour - 3 c
  • stick margarine - 1 item
  • baking powder - 2 tsp
  • large egg - 1 item
  • blueberries

How to make blueberry bread:

Use a 9 x 5-inch loaf pan. Grease with cooking spray. Mix baking powder, salt, flour and sugar. Reserve 1 tablespoon margarine for crumb topping.

With pastry blender, cut in remaining margarine until mix resembles fine crumbs. Stir in milk, vanilla and egg until flour is just moistened. Stir in blueberries. Spoon batter into loaf pan. Mix cinnamon, 2 tablespoons of flour, 2 tablespoons of sugar and reserved margarine until mix resembles coarse crumbs. Sprinkle crumb topping over batter.

Bake 1 hour and 20 minutes or until toothpick inserted in center comes out clean. Cool in pan 20 minutes. Remove from pan and cool on wire rack.
