Split pea soup
Ingredients/Components
- water
- chopped onion - 1/2 c
- 1 lb
- salt to taste - 1 item
- sliced carrots - 1 c
- sliced celery - 1 c
- ham hock - 1 item
How to make split pea soup:
Cover peas with cold water and soak 12 to 18 hours in a cool place. Drain. Add 2 1/2 quarts water, ham hock and vegetables. Bring to a boil. Cover and simmer 2 hours or until peas are tender. Remove ham hock. Cut meat into small pieces. Press vegetables through a sieve. Add meat. Add boiling water, if necessary, for desired consistency. Salt to taste. Pour hot into hot jars, leaving 1 inch headspace. Process pints 50 minutes, quarts 1 hour in pressure canner at 10 pound pressure.Recipe categories: < 4 hours, Soups & stews, 3 steps or less.
