  • shredded sharp Cheddar cheese - 8 oz
  • butter - 1/2 c
  • water - 2 3
  • ground red pepper - 1/8 1/4
  • pecan halves, lightly toasted - 24 item
  • flour
  • salt - 1/4 tsp
  • whole pitted dates - 24 item
  • 10x sugar

How to make black-eyed susans:

Bring cheese and butter to room temperature. Beat with electric mixer until combined. Add flour, 2 tablespoons water, salt and pepper. Stir until combined. If crumbly, add water.

Split dates lengthwise from top to bottom, but do not cut through. Lay dates open. Place pecan half in each date and close dates around pecans. Set aside.

On a lightly floured surface, roll cheese mixture to 1/8-inch thickness. Cut into 3-inch circles. Wrap each circle around a stuffed date, pinching edges to close. Place on ungreased baking sheet. Bake at 350° for 15 to 17 minutes or until golden brown. Cool and sprinkle with 10x sugar. Makes 2 dozen.
