Ingredients/Components
- sugar - 1 c
- salt - 1/2 tsp
- baking soda - 1 tsp
- egg - 1 item
- all-purpose flour
- hot water - 2 Tbsp
- butter or shortening - 1/2 c
- ripe bananas - 1 c
How to make banana muffins:
Preheat oven to 375°. Grease 12 muffin cups. Cream together butter and sugar in large bowl. Peel ripe bananas and mash until no lumps remain. Blend egg into creamed sugar/butter mixture and then mix mashed bananas.In hot water dissolve baking soda. Add it to sugar/banana. Combine sugar/banana mixture with flour and salt and stir. Keep stirring only until blended, about 15 to 20 times. Mixture should be lumpy. Spoon into muffin cups and bake 20 minutes or until golden brown. Contains 220 calories, 37% fat calories.
