Ingredients/Components
- sugar
- vinegar - 3 c
- celery seed
- medium onions - 6 item
- medium zucchini - 6 item
- mustard seed - 2 Tbsp
- turmeric
How to make zucchini pickles:
Brine:5 c. sugar3 c. vinegar1 1/2 tsp. turmeric1 1/2 tsp. celery seed2 Tbsp. mustard seed Wash and slice zucchini and onions. Put a handful of salt over zucchini mixture. Cover with crushed ice; let stand 3 hours or overnight. Drain well.Add brine mixture and let come to a boil. Pack in hot jars. Seal.
