Ingredients/Components
- sugar - 2 c
- cinnamon - 3 tsp
- eggs - 3 item
- vanilla - 2 tsp
- salt - 1 tsp
- chopped nuts - 1/2 c
- flour - 3 c
- oil - 1 c
- soda - 1 tsp
- baking powder - 1/4 tsp
- grated zucchini - 2 c
How to make zucchini cake:
Beat eggs until light. Add oil, sugar, zucchini and vanilla. Mix lightly but well. Sift flour, soda, baking powder, salt and cinnamon. Add to zucchini mixture; add nuts. Bake in two greased 9 x 5-inch loaf pans at 325° for 1 hour or until tests done. Remove from pans immediately and allow to cool on rack.
