Ingredients/Components
- sugar - 2 c
- cinnamon - 3 tsp
- eggs - 3 item
- vanilla - 3 tsp
- flour - 3 c
- oil - 1 c
- baking powder - 1/4 tsp
- baking soda - 1 tsp
- chopped walnuts - 1 c
- salt optional - 1 tsp
- raw zucchini, shredded - 2 c
How to make zucchini nut bread:
Beat eggs and sugar together; add oil and vanilla. Stir well. Add flour, soda, baking powder, salt and cinnamon. Blend and add zucchini and nuts. Bake at 350° for 1 hour (325° if glass pans) in greased and floured pans. Makes 2 loaves or 1 Bundt pan.Recipe categories: Breads, Quick breads, Squash.
