Zucchini nut bread

Ingredients/Components

• sugar - 2 c
• cinnamon - 3 tsp
• eggs - 3 item
• vanilla - 3 tsp
• flour - 3 c
• oil - 1 c
• baking powder - 1/4 tsp
• baking soda - 1 tsp
• chopped walnuts - 1 c
• salt optional - 1 tsp
• raw zucchini, shredded - 2 c

How to make zucchini nut bread:

Beat eggs and sugar together; add oil and vanilla. Stir well. Add flour, soda, baking powder, salt and cinnamon. Blend and add zucchini and nuts. Bake at 350° for 1 hour (325° if glass pans) in greased and floured pans. Makes 2 loaves or 1 Bundt pan.
