Blueberry muffins
Ingredients/Components
- sugar - 2/3 c
- eggs - 2 item
- milk - 1 c
- vanilla extract - 1 tsp
- salt - 1/2 tsp
- baking powder - 1 Tbsp
- all-purpose flour - 2 c
- butter or margarine, melted - 1/3 c
- ground nutmeg - 1 tsp
- additional sugar - 1 item
- additional butter or margarine, melted - 1 item
- fresh or frozen blueberries* - 2 c
How to make blueberry muffins:
In a mixing bowl, combine flour, sugar, baking powder and salt. In another bowl, beat eggs. Blend in milk, butter, nutmeg and vanilla. Pour into dry ingredients and mix just until moistened. Fold in blueberries. Fill greased or paper lined muffin cups 2/3 full. Bake at 375° for 20 to 25 minutes. Brush tops with melted butter and sprinkle with sugar. Yields 1 dozen.*If using frozen blueberries, rinse and pat dry before adding to batter.
