  • chopped nuts - 1 c

  • cocoa - 4 Tbsp
  • baking powder - 1/2 tsp
  • baking soda - 1 tsp
  • all-purpose flour
  • margarine, softened - 1/2 c
  • cooking oil - 1/2 c
  • box powdered sugar - 1 lb
  • chopped zucchini - 2 c
  • Add eggs, vanilla, sour cream and zucchini; mix well

How to make zucchini chocolate cake:

Cream margarine, cooking oil and sugar. Add eggs, vanilla, sour cream and zucchini; mix well. Sift dry ingredients together; add to sugar-egg mixture. Mix thoroughly. Pour into greased 8 x 11-inch pan. Bake in 325° oven for 45 minutes or until cake tests done.Frosting:1/2 c. margarine6 Tbsp. milk1 (1 lb.) box powdered sugar1 tsp. vanilla1 c. chopped nuts In a small saucepan, bring milk and margarine to a boil. Remove from heat; beat in sugar, vanilla and nuts. Spread over Zucchini Chocolate Cake while still warm.
