Ingredients/Components
- sugar - 2 c
- cinnamon - 2 tsp
- eggs - 3 item
- vanilla - 1 tsp
- pkg - 1 oz
- salt - 1/2 tsp
- chopped nuts - 1/2 c
- nutmeg - 1 tsp
- grated carrots - 2 c
- baking powder - 2 tsp
- baking soda - 1 tsp
- all-purpose flour - 3 c
- powdered sugar
- cooking oil - 1 c
- crushed pineapple, drained - 1/2 c
- Frosting:1 stick margarine
How to make carrot cake:
Frosting:1 stick margarine1 (8 oz.) pkg. cream cheese1 tsp. vanilla1 1/2 c. powdered sugar Sift together all dry ingredients. Mix all other ingredients and add to dry ingredients. Bake in 2 (9-inch) greased cake pans or 13 x 9 x 2-inch pan in preheated 350° oven for about 50 to 55 minutes for 9 x 13-inch and about 35 minutes for 9-inch pan.Frosting: Cream margarine and cheese; add confectioners sugar. Ice cooled cake.
