  • cinnamon - 2 tsp
  • eggs - 3 item
  • vanilla - 1 tsp
  • pkg - 1 oz
  • salt - 1/2 tsp
  • chopped nuts - 1/2 c
  • nutmeg - 1 tsp
  • grated carrots - 2 c
  • baking powder - 2 tsp
  • baking soda - 1 tsp
  • all-purpose flour - 3 c
  • powdered sugar
  • cooking oil - 1 c
  • crushed pineapple, drained - 1/2 c
  • Frosting:1 stick margarine

How to make carrot cake:

Frosting:1 stick margarine1 (8 oz.) pkg. cream cheese1 tsp. vanilla1 1/2 c. powdered sugar Sift together all dry ingredients. Mix all other ingredients and add to dry ingredients. Bake in 2 (9-inch) greased cake pans or 13 x 9 x 2-inch pan in preheated 350° oven for about 50 to 55 minutes for 9 x 13-inch and about 35 minutes for 9-inch pan.

Frosting: Cream margarine and cheese; add confectioners sugar. Ice cooled cake.
