Ingredients/Components

  • ground beef - 1 lb
  • onion, sliced - 1 item
  • can cream of mushroom soup undiluted - 1 item
  • zucchini, peeled - 1 to
  • sliced or grated American cheese - 1/2 lb

How to make zucchini casserole:

Any of the cream soups are good, celery, broccoli, asparagus.

Cook the sliced zucchini in boiling water until tender. Brown meat and sliced onion. Place alternate layers of zucchini, meat and cheese in a 1 1/2-quart casserole. Pour mushroom soup over top. Top with grated cheese, if desired. Bake at 300° for 1 hour. Makes 4 servings.
