Ingredients/Components

  • butter, softened - 1/3 c
  • sugar
  • vanilla - 1 tsp
  • milk
  • salt - 3/4 tsp
  • butter - 2 Tbsp
  • cornstarch - 1/4 c
  • water - 1 c
  • baking powder
  • shortening - 1/3 c
  • egg whites - 4 item
  • sifted powdered sugar - 1/4 c
  • sifted cake flour - 3 c
  • light corn syrup - 2 Tbsp
  • lemon juice - 3 Tbsp
  • grated lemon rind - 1 Tbsp
  • egg yolks, beaten - 2 item
  • Fluffy Frosting - 1 item
  • Gradually add sugar, beating well at medium speed
  • fresh coconut, grated - 1 item
  • Add water, stirring well

How to make coconut cake:

Cream shortening and butter. Gradually add sugar, beating well at medium speed. Combine flour, baking powder and salt. Add to creamed mixture, alternating with milk, beginning and ending with flour mixture. Mix after each addition. Stir in vanilla. Beat egg whites until stiff. Gently fold into batter. Pour into three 9-inch cake pans that have been greased and floured. Bake for 22 minutes or until toothpick comes out clean at 350°. Use Fluffy Frosting to ice cake.Lemon Filling for Coconut Cake:1 c. sugar1/4 c. cornstarch1 c. water2 egg yolks, beaten2 Tbsp. butter1 Tbsp. grated lemon rind3 Tbsp. lemon juice Combine sugar and cornstarch in heavy saucepan. Add water, stirring well. Cook over medium heat, stirring constantly until thickens. Boil for 1 minute. Gradually stir about 1/4 of hot mixture into egg yolks. Add remaining hot mixture, stirring constantly. Return to burner and boil for 1 minute or until candy thermometer registers 165°, stirring steady. Remove from heat, cool and then spread between layers of cake.Fluffy Frosting:1 c. sugar1/3 c. water2 Tbsp. light corn syrup3 egg whites1/4 c. sifted powdered sugar1 tsp. vanilla Put first 3 ingredients in a heavy saucepan. Cook over medium heat, stirring constantly until clear. Then cook without stirring until candy thermometer registers 236°. Beat egg whites at room temperature until soft peaks form. Continue beating and slowly add syrup mixture. Add powdered sugar and vanilla. Continue beating until stiff peaks
