Ingredients/Components

  • unsweetened chocolate * - 2 sq
  • margarine - 1/3 c
  • sugar - 3/4 c
  • eggs, beaten - 2 item
  • vanilla - 1 tsp
  • almond extract - 1/4 tsp
  • whole wheat pastry flour or all-purpose flour - 1 c
  • salt - 1/4 tsp
  • baking powder - 1/2 tsp
  • finely grated peeled zucchini - 1 c

How to make zucchini brownies:

Melt chocolate and margarine together; add sugar and cool. Add eggs, flour, salt, baking powder, vanilla, almond extract and zucchini. Spread in greased 8-inch square pan. Bake at 350° for 25 minutes.

*Three level tablespoons cocoa plus one level tablespoon shortening equals 1 square unsweetened chocolate.
