Zucchini brownies
Ingredients/Components
- unsweetened chocolate * - 2 sq
- margarine - 1/3 c
- sugar - 3/4 c
- eggs, beaten - 2 item
- vanilla - 1 tsp
- almond extract - 1/4 tsp
- whole wheat pastry flour or all-purpose flour - 1 c
- salt - 1/4 tsp
- baking powder - 1/2 tsp
- finely grated peeled zucchini - 1 c
How to make zucchini brownies:
Melt chocolate and margarine together; add sugar and cool. Add eggs, flour, salt, baking powder, vanilla, almond extract and zucchini. Spread in greased 8-inch square pan. Bake at 350° for 25 minutes.*Three level tablespoons cocoa plus one level tablespoon shortening equals 1 square unsweetened chocolate.
