Ingredients/Components
- eggs - 3 item
- oil - 1 c
- brown sugar - 1 c
- granulated sugar - 1 c
- coarsely grated zucchini - 2 c
- sifted flour can substitute 1 c - 3 c
- baking powder - 1/4 tsp
- soda - 2 tsp
- salt - 1 tsp
- cinnamon - 2 3
- pinch of nutmeg - 1 item
- vanilla - 1 Tbsp
- chopped nuts optional - 1/2 1
- raisins optional - 1/2 c
How to make zucchini bread:
Beat eggs, sugars, oil and zucchini. Add dry ingredients; mix well. Add vanilla and nuts. Pour into 2 greased and lightly floured pans. Bake at 350° for 40 minutes. Test for doneness with a toothpick. Stores well in freezer for several months.Recipe categories: Breads, Quick breads, Sweet.
