Ingredients/Components

  • flour - 3 c
  • soda - 1 tsp
  • salt - 1 tsp
  • cinnamon - 3 tsp
  • baking powder - 1/4 tsp
  • eggs - 3 item
  • oil - 1 c
  • brown sugar - 1 c
  • white sugar - 1 c
  • grated zucchini - 2 c
  • vanilla - 2 tsp
  • raisins - 1/2 1
  • chopped nuts optional - 1 c

How to make zucchini bread:

Mix together first 5 dry ingredients. In mixer bowl, beat well eggs, oil, sugars, etc. Then mix in dry ingredients. Set oven for 325°. Grease and flour 2 loaf pans. Divide batter evenly between 2 loaves; bake for approximately 1 hour. Remove from pans immediately. This bread freezes well.
