Ingredients/Components
- sugar - 1 c
- eggs - 3 item
- vanilla - 1 tsp
- salt - 1 tsp
- oil - 1 c
- grated zucchini - 2 c
- ground cinnamon - 1 tsp
- flour self-rising - 3 c
How to make zucchini bread:
Sift flour, cinnamon and salt together. Beat eggs until foamy. Add sugar, oil, vanilla and sifted dry ingredients a little at a time. The mixture will be thick. Add the zucchini; mixture will be gummy. Pour into two well-greased 8 1/2 x 4 1/2 x 2 1/2-inch loaf pans and bake at 350° for 1 hour.
