  • sugar - 2 c
  • cinnamon - 3 tsp
  • eggs - 3 item
  • vanilla - 1 tsp
  • salt - 1 tsp
  • flour - 3 c
  • oil - 1 c
  • soda - 1 tsp
  • baking powder - 1/4 tsp
  • nuts optional - 1/2 c
  • peeled and grated zucchini - 2 c

How to make zucchini bread:

Beat eggs until foamy. Beat in oil, sugar and vanilla and mix well. Beat in zucchini. Sift flour with salt, cinnamon and dry ingredients. Fold in nuts. Put in 2 well-greased bread pans and bake 60 to 75 minutes at 350°.
