Ingredients/Components
- cinnamon - 1 tsp
- eggs - 2 item
- vanilla - 2 tsp
- milk - 1/4 c
- salt
- flour - 3 c
- brown sugar - 1 c
- nutmeg - 1 tsp
- soda
- baking powder - 1 tsp
- shortening - 3/4 c
- nuts - 1/2 c
- powdered sugar - 1 to
- grated zucchini - 2 c
- raisins - 3/4 c
- cloves - 1/2 tsp
- white sugar - 1/2 c
- Cream shortening and sugar
How to make zucchini cookies:
Sift together dry ingredients. Cream shortening and sugar. Beat in vanilla and eggs. Alternate with zucchini. Stir in raisins and nuts also flour mixture. Drop on greased cookie sheet. Bake at 350° for 8 to 10 minutes. After removing from oven, let stand a few seconds, then remove. Ice when cooled.Zucchini Cookie Icing:1/2 c. butter1 c. brown sugar1/4 c. milk1 3/4 to 2 c. powdered sugar Melt butter in saucepan. Boil 2 minutes on low, stirring constantly. Cool to lukewarm.
