Ingredients/Components

  • eggs - 3 item
  • vanilla - 1 tsp
  • salt - 1 tsp
  • oil
  • baking soda - 2 tsp
  • ground cloves - 1 tsp
  • ground cinnamon - 1 tsp
  • sweet butter - 3 Tbsp
  • unbleached all-purpose flour - 2 c
  • shelled walnuts, chopped - 1 c
  • sugar *
  • unpeeled raw zucchini, grated - 2 c

How to make zucchini bread:

*You can use 3/4 cup brown sugar and 3/4 cup white sugar.

Preheat oven to 350°. Butter a 9 x 5-inch loaf pan. Beat eggs, oil, sugar and vanilla until light and thick. Fold grated zucchini into oil mixture. Sift dry ingredients together. Stir into zucchini mixture until just blended. Fold in walnuts. Pour batter into the buttered loaf pans. Bake on the middle rack of the oven for 1 hour and 15 minutes or until a cake tester inserted in the center comes out clean.
