Ingredients/Components

  • sugar - 1 c
  • salt - 1/2 tsp
  • flour
  • soda
  • boiling water - 1 c
  • salad oil - 1/2 c
  • eggs, slightly beaten - 2 item
  • all-bran cereal - 3 c
  • buttermilk * - 2 c

How to make bran muffins:

*I use milk, add 2 teaspoons of lemon juice and let set for 5 minutes.

Moisten cereal in boiling water in a separate bowl. In a large bowl, mix slightly beaten eggs. Add buttermilk, salad oil, soda, salt, sugar and flour. Mix well. Bake at 425° for 20 minutes. Can be stored up to 2 weeks in a container (not metal).

Note: May add dates, nuts or raisins.
