Bran muffins
Ingredients/Components
- sugar - 1 c
- salt - 1/2 tsp
- flour
- soda
- boiling water - 1 c
- salad oil - 1/2 c
- eggs, slightly beaten - 2 item
- all-bran cereal - 3 c
- buttermilk * - 2 c
How to make bran muffins:
*I use milk, add 2 teaspoons of lemon juice and let set for 5 minutes.Moisten cereal in boiling water in a separate bowl. In a large bowl, mix slightly beaten eggs. Add buttermilk, salad oil, soda, salt, sugar and flour. Mix well. Bake at 425° for 20 minutes. Can be stored up to 2 weeks in a container (not metal).
Note: May add dates, nuts or raisins.
