Zippy zucchini salad
Ingredients/Components
- granulated sugar - 1 tsp
- cider vinegar - 3 Tbsp
- minced fresh parsley - 2 Tbsp
- clove garlic - 1 item
- salt and pepper to taste - 1 item
- chili sauce - 1/3 c
- olive oil - 2 tsp
- dried oregano - 1/4 tsp
- slivered almonds - 1/4 c
- salad greens - 1 item
- dried tarragon - 1/2 tsp
- black olives, sliced - 1/2 c
- zucchini, sliced into 1/4-inch rounds - 3 item
- bottled spicy, sweet French salad dressing - 1/3 c
How to make zippy zucchini salad:
Saute garlic in olive oil. Add zucchini; stir-fry until just tender. Discard garlic. Remove zucchini from pan; place in bowl or other container. Add sugar to pan, then add olives, almonds, vinegar, chili sauce, salad dressing, parsley, tarragon, oregano, salt and pepper. Cook over moderate heat for about 2 minutes to blend flavors. Pour sauce over zucchini; cover and chill several hours or overnight. Serve on salad greens. Makes 4 to 6 servings.Recipe categories: Squash, Salads, Greens.
