Ingredients/Components
- milk - 1/2 c
- flour - 2 Tbsp
- butter - 3 Tbsp
- chopped onion - 1/3 c
- margarine, melted - 1 Tbsp
- bread crumbs
- zucchini - 2 lb
- medium tomatoes, chopped - 2 item
- butter for cooking - 1 item
- small block Velveeta, cut into small pieces - 1 item
How to make zesty zucchini:
Saut zucchini and chopped onions with butter for cooking. Combine with tomatoes in a casserole dish. In a separate pan, melt 3 tablespoons butter. Add flour, milk and Velveeta. Stir until cheese is melted. Spread over zucchini/onion/tomato mixture. Combine bread crumbs and melted margarine and sprinkle on top.
