Wild rice soup
Ingredients/Components
- chopped onion - 1 c
- chopped celery - 3/4 c
- chopped green pepper - 1/3 c
- can mushrooms - 1 oz
- bacon - 1 lb
- bacon drippings - 3 Tbsp
- cans cream of mushroom soup - 3 3/4
- wild rice - 1/2 c
- cans ready to serve chicken broth - 2 1/2
How to make wild rice soup:
Wash wild rice. Boil rice for 15 minutes and drain; set aside. Fry bacon until crisp. Remove bacon and discard all but 3 tablespoons bacon drippings. Saute celery, onion and green pepper in drippings until onion is transparent. Put in a big kettle and add rice, broth, mushrooms, soup and diced bacon. Cook on low heat for 3 hours or more.
