Ingredients/Components

  • chopped onion - 1 c
  • chopped celery - 3/4 c
  • cans chicken broth - 2 1/2
  • chopped green pepper - 1/3 c
  • small can mushrooms - 1 item
  • bacon - 3/4 c
  • bacon drippings - 3 Tbsp
  • cans cream of mushroom soup - 2 item
  • wild rice - 1/2 c

How to make wild rice soup:

Wash rice. Boil for 15 minutes; drain. Set aside. Fry bacon until crisp. Remove bacon and discard all grease but 3 tablespoons of drippings. Saute celery, onion and pepper in drippings until onion is transparent. Put in large kettle. Add rice, broth, mushrooms, soup and bacon. Cook on low heat 1 hour. Do not add salt. Serves 12.

If I am making this just for family or a small group, I just cut the recipe in half. Keeps fine under refrigeration for several days. Once you make this recipe, you will have more requests for it.
