Ingredients/Components
- milk - 2 c
- butter - 1 Tbsp
- water - 1 c
- Velveeta cheese - 1/4 lb
- Cheddar cheese, shredded - 1/4 lb
- small onion, minced - 1 item
- can cream of potato soup - 1 item
- raw wild rice - 1/2 c
How to make wild rice soup:
Cook wild rice according to label instructions (55 to 60 minutes); set aside.Saute onion in butter until tender. Add water, milk and soup. Increase heat to medium stirring occasionally. When mixture is hot, add cheese. When creamy, add wild rice. Garnish with crumbled bacon if desired. Serves 2 or 3 for dinner.
