Ingredients/Components

  • oil - 3 Tbsp
  • nutmeg - 1/2 tsp
  • chili powder - 1 Tbsp
  • clove garlic, minced - 1 item
  • water - 6 c
  • chunky peanut butter - 1/2 c
  • beef cubes 1-inch or smaller, rolled in flour - 2 lb
  • medium onions, sliced - 4 item
  • tomato paste - 3/4 c
  • red pepper if desired - 1 item

How to make west african groundnut stew:

In large heavy kettle, heat oil; add meat. When meat is browned, add onion, garlic, nutmeg, chili powder, sliced onion, tomato paste, water and red pepper. Simmer until meat is tender. A half hour before serving, heat peanut butter and oil in small saucepan. Stir over medium heat 5 minutes. Add beef stew and simmer over low heat 20 minutes. Serve over rice.

Options: Use chicken pieces in place of beef.
