Vegetable pilaf
Ingredients/Components
- water
- shredded carrots
- pepper - 1/4 tsp
- chopped fresh parsley - 1/2 c
- sliced green onions - 1/3 c
- sliced mushrooms
- long grain rice uncooked - 1/2 c
- chicken soup base or bouillon - 1 tsp
How to make vegetable pilaf:
Combine 1 1/3 cups water and soup base. Bring to boil. Add rice; cover and reduce heat. Simmer 20 minutes or until liquid is absorbed. Add mushrooms, carrot, water, parsley, onion and pepper to rice. Stir well. Cover and cook over low heat 5 minutes. Makes 4 servings.Each serving contains 110 calories, .4 g fat, 198 mg sodium and 2.8 g protein. Exchanges: 1 vegetable and 1 bread.
