Tortellini soup
Ingredients/Components
- pkg - 2 oz
- water - 4 c
- margarine or butter - 2 Tbsp
- pepper - 1/2 tsp
- grated Parmesan cheese - 1 item
- chopped fresh parsley - 2 Tbsp
- cloves garlic, minced - 2 item
- chicken broth - 8 c
- onion, chopped - 1 item
- carrot - 1 item
- grated nutmeg - 1 tsp
- medium stalks celery, chopped - 2 item
How to make tortellini soup:
Melt margarine in 6-quart Dutch oven over medium heat. Cover and cook garlic, celery, carrot and onion in margarine 10 minutes, stirring occasionally. Stir in broth and water. Heat to boiling; reduce heat. Stir in tortellini. Cover and simmer about 20 minutes, stirring occasionally, until tortellini are tender. Stir in parsley, pepper and nutmeg. Cover and simmer 10 minutes. Sprinkle each serving with Parmesan cheese.Recipe categories: Soups & stews, Main dish, One Dish meal.
