Topping:1 (3 oz.) bar bittersweet chocolate as Lindt, coarsely chopped (may use semi-sweet chocolate chips)12 caramels, quartered1/2 c. pecans Preheat oven to 350°. Blend cheesecake ingredients until smooth. Place 12 foil baking cups in a muffin tin. Ladle cheesecake batter into cups. Combine topping ingredients in a bowl and generously top each cheesecake. Bake 35 minutes. Cool completely, then refrigerate. Best served at room temperature or slightly warmed.
