Ingredients/Components

  • salt - 1/4 tsp
  • butter - 1 Tbsp
  • can evaporated milk - 1 oz
  • sprigs parsley - 2 item
  • to 6 small potatoes - 4 item
  • Swiss cheese, cubed - 1 c
  • fresh green onions, chopped - 4 item

How to make swiss potato soup:

Boil potatoes until tender. Drain, reserving 1/4 cup water. Peel and cube. Saute onions in butter. Combine potatoes, onions, parsley, cheese, milk, water and salt. Cook until all vegetables are well blended. Makes 4 servings. The parsley can be omitted.
