Swiss potato soup
Ingredients/Components
- salt - 1/4 tsp
- butter - 1 Tbsp
- can evaporated milk - 1 oz
- sprigs parsley - 2 item
- to 6 small potatoes - 4 item
- Swiss cheese, cubed - 1 c
- fresh green onions, chopped - 4 item
How to make swiss potato soup:
Boil potatoes until tender. Drain, reserving 1/4 cup water. Peel and cube. Saute onions in butter. Combine potatoes, onions, parsley, cheese, milk, water and salt. Cook until all vegetables are well blended. Makes 4 servings. The parsley can be omitted.Recipe categories: Potato, Soups & stews, Chowders.
