Swiss potato soup
Ingredients/Components
- pkg - 1 oz
- milk - 2 c
- salt - 2 tsp
- butter - 3 Tbsp
- water - 3 c
- dry mustard - 1 tsp
- chopped celery - 2 Tbsp
- white pepper - 1/8 tsp
- parsley optional - 1 item
- large onion, chopped - 1 item
- large potatoes, pared and cut up - 3 item
How to make swiss potato soup:
Saute onion in butter until soft in a large kettle. Stir in potatoes, salt, mustard, pepper and water. Heat to boiling. Cover and simmer 30 minutes or until potatoes are soft. Pour soup, a little at a time, into blender or food processor. Process until smooth. Return to kettle. Stir in milk; heat slowly until it boils. Stir in cheese.
