Sweet potato casserole



  • eggs - 2 item
  • chopped pecans - 1/2 c
  • packed brown sugar - 1/2 c
  • milk - 1 c
  • butter - 3/4 c
  • butter, melted - 3/4 c
  • white sugar
  • corn flakes
  • dash of cinnamon - 1 item
  • to 8 sweet potatoes - 6 item

How to make sweet potato casserole:

Topping:1 c. corn flakes1/2 c. chopped pecans1/2 c. packed brown sugar3/4 c. butter, melted Cook potatoes until tender. Slice thin, will take less cooking time. With electric mixer, blend cooked potatoes, butter, eggs, cinnamon, milk and sugar. Pour into casserole dish. Bake at 400° for 20 to 25 minutes. Combine topping mixture and pour evenly over potatoes. Cook for 15 to 20 minutes at 400°.
