Sweet and sour carrots
Ingredients/Components
- carrots, diagonally sliced - 1 lb
- medium green pepper, seeded and cut in 1-inch squares - 1 item
- can pineapple chunks in their own juice - 1 oz
- sugar - 1/3 c
- cornstarch - 1 Tbsp
- salt - 1/2 tsp
- vinegar - 2 Tbsp
- soy sauce - 2 tsp
How to make sweet and sour carrots:
In a saucepan, cook carrots, covered, in small amount of lightly salted water until just tender, 15 minutes. Add green pepper; cover and cook 3 minutes more. Drain. Drain juice of pineapple; save and add water to 1/3 cup liquid. In saucepan, combine sugar, cornstarch and salt. Stir in pineapple liquid, vinegar and soy sauce. Cook and stir until bubbly. Stir in vegetables and pineapple; heat through. Serves 6.Recipe categories: Side dish, Vegetables, Carrots.
