Danish red cabbage
Ingredients/Components
- sugar - 2 3
- salt
- large red cabbage, cored and thinly sliced - 1 item
- fat raw goose fat, salt pork or bacon fat - 2 Tbsp
- wine vinegar second choice, cider vinegar - 1/2 c
- to 3 apples, peeled and cut up fine - 2 item
- to 6 allspice berries - 5 item
- handful of raisins optional - 1 item
How to make danish red cabbage:
Put cabbage in a heavy, porcelain lined iron pot with vinegar. Add fat. Carefully bring to a boil. Add a little water if necessary. Add apples, allspice berries, salt, sugar and raisins. Cabbage should be juicy but not soupy. Taste for salt and give the pepper mill a few turns.Recipe categories: Low protein, Side dish, Vegetables.
