Summer vegetable casserole
Ingredients/Components
- butter - 2 Tbsp
- bread crumbs - 3/4 c
- salt and pepper to taste - 1 item
- onion, diced - 1/2 c
- green pepper, diced - 1/2 c
- corn - 1 c
- fresh tomatoes, diced - 1 c
- zucchini, diced - 1 c
- grated cheese if desired - 1 item
How to make summer vegetable casserole:
Melt butter. Add vegetables and saute until tender (about 10 minutes). Season with salt and pepper. Pour into casserole dish. Sprinkle with bread crumbs and grated cheese. Bake at 350° until cheese is melted and top light golden brown (15 to 20 minutes). May be frozen by pouring into freeze wrap lined casserole dish. Fold and seal freezer paper. Freeze. When frozen, remove from casserole dish and return to freezer immediately.To Serve: Preheat oven to 350°. Unwrap and place in casserole dish. Bake for 1/2 hour or until top is light golden brown and center heated through.
